I am going to be installing my Evo III 16G into my 2G this weekend and I have all the necessary hardware to install it, including an SS oil feed line from the head, and I was wondering if I can use the plug on the head to plug the hole on the oil filter housing that will be there when I remove the stock oil feed line. If not, where can I find a good plug for it?

try your local hardware store, i find plugs there for various things.
This won't work, it must be a 3/8" BSPT plug and most hardware or car parts stores only carry NPT plugs. Go to your local dealership and order MD145018, thats the OEM 3/8" BSPT plug.

you could try going to the junk yard and pulling one from another car/truck i believe 1G's and the mighty max trucks have a similar oil filter housing mount you can pull from... 10mm allen wrench i believe...
