I build them and I buy my gaskets separate since some of the rebuild components (oil pump, water pump, etc come with there own). Some of the gaskets that aren't thought about a lot are the oil drain BOLT washers (with a gasket). So lets run down what you need:

Front case gasket - comes with oil pump
OFH gasket - comes with oil pump
Water pump gasket - comes with water pump
Water tube O-ring - comes with pump usually
Front main seal - comes with oil pump and already installed
Rear main seal
Thermostat housing gasket
Head Gasket
Intake Gasket
Exhaust Gasket
Valve Cover set, with sparkplug well seals
Throttle body gaskets
Timing belt
New Timing pulleys
OEM Timing Tensioner
Balance shaft belt if not BSE
Balance shaft belt tensioner pulley
Harmonic Balancer - I always replace, even if with a unit from RockAuto
Thermostat
Rings
Main Bearings
Rod Bearings
Oil Pump - OEM or ACL
Turbo drain gaskets
Freeze Plugs
Oil Pickup Tube gasket
Rear Main housing gasket
Oil drain bolt gasket/washers (2)
Just about forgot these - 8 aluminum crush washers for the oil squirters, if removed

Get the head and block decked or checked for true flatness and correct if needed.
Clean the hell out of the crank, like this......

I am building a 7 bolt right now for my son and am just about in the same area as you. Here is what I started on.........I smooth out the oil supply passages on the front of the block on all of my builds.
Just attention to small details........

1 tip on smoothing the oil passages is to leave the old oil pump gasket stuck to the front of the block just in case you get out of the oil galley. It'll save you a headache.
Then clean that surface when you are done!

You can use any gasket set even from ebay but I recommend to use Mitsubishi gaskets at least for oil pump, oil filter housing and oil pickup and a name brand head gasket. And don't reuse the old stock head bolts. You won't regret.
