stock coolant gauge?

Just ignore the stock gauge? Or get a aftermarket water temperature gauge. You could also "calibrate" it by removing the gauge cluster. Just remove the cluster and remove the needle for the temperature and put it where you want to when the engine is up to temperature.

I'd just get an aftermarket gauge though.
 
Sounds like your temp sender is faulty. Either ignore it (make sure to monitor it frequently with link) or replace the sender (assuming it is actually faulty).
 
Warm the car up, and using a tester, check the Continuity between the terminals on the coolant temp sensor/switch/sending unit.

Standard Values:
Water Sensor
Temperature Continuity

Below 239°F (115°C)..........Yes
Above 239°F (115°C)...........No


If no continuity below 239 degrees, replace the sensor.
 
None of the stock guages are really useful. I had the same problem and it showed a faulty sensor.
