Earlier this year, probably 8-9 months ago at this point, I had my master and slave cylinder replaced and when that happened the shop didn't adjust the clutch pedal correctly resulting in the "build up." I got under the dash and adjusted it to the point where it may not have been perfect but it wasn't building up pressure and slipping anymore. Today I went to go to class and the clutch and pedal were fine. About an hour and a half later after my lab, I got in to go home and the clutch was rock hard like it was when it was building pressure. I was able to get it home and I got under the dash again and tried to adjust the rod but it seemed like not matter which way I moved the bolt and pushed the pedal, it wouldn't release. Is there anything that else that I should look at? I'm going to let it sit overnight to see if the pressure goes away or if it's still there. It seems really random that this issue would happen so suddenly out of the blue especially after the car was sitting for well over an hour which leads me to believe it's not an issue with the clutch adjustment.
 
First things first, you need to adjust the clutch the proper way if you have not done so already. This is the correct way.

If the problem is still there after that, then I might suggest that either the clutch stopper / switch is screwed in too tight causing the relief valve to never open regardless of how much the master cylinder rod is adjusted.

I'm not too familiar with exactly how the relief valve is set up in the master cylinder, but I imagine that it could be possible that it is blocked somehow or faulty.

I do think that it is weird that you are getting the "pump up" from letting the car sit. In my head it might have something to do with the fluid cooling down and thickening paired with an improperly adjusted clutch
