ok guys here i got another one for you....
So the fan in my car don't come on when the needle is at halfway up they come one until the needle It's like waaaaayy up almost on the "H".WTF
DSMlink shows me the temps are around 195 to 200 tho and thats a normal temp for these cars right? Or am I overheating?
I'm thinking that maybe the previously owner just put a shitty low temp sensor in there. Is that possible? or what do you think?

Since you have link, check to see if your coolant temp is being offset. If it is, change it to zero and see what yours temps read. Also physically check your overflow bottle to see if your coolant is boiling.

Theres two temp sensors. 1 for the gauge and one for the ecu. Maybe your gauge is broke. Your temp isnt that bad. If you turn the ac button on, does the fan turn on?

Yes it does turn on... where are these temp sensor located i know one is on the thermostat housing where is the other one? i don't have aftermarket water temp gauge.

OK first think to do tomorrow morning

There both on the T stat housing. Theres a big one and a very small one.

So now which on is for the ecu and which for the gauge my guessing just by looking at them the small is for the gauge and the big for the ecu... Am I right?

When I'm cruising temps never go above 160 or even when doing random pulls, only if idle for a while (15min or more) the temps go up and the fan kick in... So maybe a have the thermostat stack open or I don't have it at all I haven't checked that yet tho.
And also could that be the reason I'm running a little rich as well?

If you aren't hitting at least 180* then you need to check your thermostat. The ECU enters learn mode at 180* and unless you have ECMLink or another ECU program that will allow you to fool the computer as to what the temperature is, then you should get that fixed.

Could very well be a stuck thermostat.

Yes i have DSMLink and i already give it a 15* offset i hope this helps me for now. I'm going to buy i new thermostat anyway, 180* thermostat should do the job.
