It's a 1998 gs 5spd manual. 185k miles, just replaced the starter since the old one was going bad (new one works like a champ).

Went to start my car after leaving work and it cranked and started and instantly died, tried to start it a few more times, heard the fuel pump going nuts and relays clicking like crazy from the cabin. Couldn't get car to start unless I held the gas pedal down all the way, when I did that it would crank then fire right up and stay running. I've had really erratic idle issues for a while and hesitation during heavy load almost like fuel cut symptoms. What's happening? Is my fuel pump dying? If you need more information in order to help just ask, this thing is a heap of problems...

Okay. My temp sensor recently fell apart in my fingers when I was doing my head gasket. I just put the metal female connectors back on and I remember accidentally shoving my arm through that opening next to the map sensor putting strain on the wiring. I'll check that out
 
When you hold the pedal down while starting, it puts the car in a de-flood mode. It temporarily keeps the injectors from pulsing, therefore preventing flooding. It sounds to me like your fuel pump is running too much. You might want to check your fuel pressure to make sure it is not too high.
