Since my water pipe has no coolant ports can I use the thermostat housing for both the feed and return?

I seriously doubt the coolant would actually flow.

Taking a basic look at it, what causes flow? Pressure differentials. If the feed and return are from the same sink at the same pressure, there is no flow.

Im going to change my turbo coolant line to a stainless steel with -6an fitting or should I do -8an?

I just wanted to make sure I have the correct sizes for a 1g

for the water pipe m16x1.50mm
for the turbo: m14x1.50

-6 is good enough. the entrances to the SS line from the pipe and the entrances(inlet circumference) to the turbo are almost equal to an6, any bigger wont make improvement, IMHO maybe any bigger may create some air pockets but I dont think it would really happen and if it did I dont think a pocket would last in the line considering the temps.

Those are the correct sizes (unless you've got a lame*ss 13G).

I don't think it will matter, however, I have use 8AN's with out a problem and there will be no problem at all if you use ether 6 or 8, The lines are not really to cool down the turbo while running, the oil is the one that cools the turbo and the water is an extra cooler, the water is there for the turbo to be cool enough when you turn off the turbo.
