Anyone have any idea what could be the problem with my 1997 Mitsubishi Eclipse Spyder GST. Cars has been sputtering, misfiring and lack of acceleration. Car shakes like crazy. Car also runs rich.

Car is basically stock except for the Injen air intake and the SRS exhaust

MAF works fine has been bench tested.
New spark plugs, gapped, and are working but have not changed the spark wires (NGK and they look new) and coils.
No boost leaks or vacuum leaks.
Changed the fuel pump 3 times but still hear it blasting.
New fuel filter and fuel pressure regulator.
Compression test is fine.
I’m thinking it’s the injectors but i don’t know at this point.
No check engine light either.

Your issue sounds very much like a problem I had on my 1991 Talon TSi. In my case it turned out to be defective capacitors on the ECU board. In particular, the reference voltage that is sent to all the engine sensors. Mass Air Flow is one of those sensors.
I noticed that the ECU wasn't on your list. Your 1997 Spyder is 28 years old, which means it has more time than my Talon had when it acted up.
It won't hurt to check the ECU.

hopefully it’s not LOL but I will check

Glad to know that you discovered the issue. Do you think contaminated fuel caused the injector clogging?
