1G Innovate O2 sensor just died. Safe to drive car gently?

This may seem like a dumb question - but my Innovate MTX-L just crapped out on me on the drive home tonight. First, it threw the E8 error, then when I shut it off and restarted a few moments later, it was stuck on value 14.7, no change.

I’ve ordered a new sensor, but I need to know if it will cause damage to anything if I drive it gently till the O2 sensor comes in.

If you have closed loop fuel trims enabled, disable it and you will be fine as long as your tune was close to begin with. The sensor dying will lead to an erroneous signal being sent to the ECU and will make fuel trims act weird. For what it is worth, if your WOT tune was good already there is no reason to be concerned with full throttle either. The O2 being broken won't change anything there. I don't know about you but I don't check my gauge during pulls.
