Will one of these engines fit into a 95 Eclipse GST?

They all will, although the V6 configuration tends to wobble back there, and if you hit a bump, it's likely to bounce a bit and take out the hatch glass.
When you put any of these in a DSM, be sure to use some heavy plastic under it to catch coolant and oil that's bound to leak out, and it's a good idea to have a sheet of half-inch plywood between the motor and the carpet. You'll find that mighty 3B20 will fit best, if you ever find one.

Just don't do anything stupid, it makes us all look bad...
