In the last 6-7 years or so my car has been driven about 400 miles since pulling my motor and modding it. Late last fall I got around driving it some and each time the cabin fogs up like crazy after some driving time. There's no water leaks that I can find. Defrost setting doesn't help much. I have my AC system pulled out.

I don't drive the car in the winter so last week I charged the battery and started the car since it's been untouched for a good month or so. Again just having the car on and ideling in the garage the interior fogged up. I would like to know if anybody has any pointers I can look into since I plan to start driving the car more come spring. If this happens all the time regardless of weather it may sit for another 6-7 years.

After much thought I'm thinking it may have something to do with my AC system. That's the only thing I've removed completely and may have not plugged up certain areas correctly but don't know which part of the system would be the culprit.
 
it is quite possible that there is a minute leak in your heater core. does the windshield have a light film on it? the film wont defog, esp without a/c to dry to the air. One way to check this is to bypass youre heater core and run the two hoses together with like a piece of pipe or pvc.
 
Thanks for the responses. I'll have to check my lines under the hood before even tearing apart the dash for the heater core.
 
I just had this same issue and it was caused by the rear wiper seal leaking. It took me a while to find it, but the water was pooling up in the plastic on the underside of the hatch. So, as the others have said you need to search around and find where the moisture is getting in.
 
My interior does the same...I've traced it to a leaking weatherstrip around the very top of the hatch. Amount of shits I give to actually fix it = 0. LOL

Make sure your hatch drains aren't plugged...check this by opening the hatch after a hard rain and see if there happens to be water laying in the channel on either side. If they're full, use some compressed air to blow debris out of the drains or else water will seep into the hatch area and fill the spare tire well.

I'm with the above posters on what it is. On my car, it leaks around the little fill spout for the Washer Fluid Tank. Not much, but with all the snow we've had lately it sure adds up in a hurry when it melts. Causes the inside of my rear glass to fog up all the time, thankfully the Defroster works ok for eliminating it.
 
If you find a leak around the hatch, check inside of spare tire compartment. Water can pool up in there without you noticing. Seen a car where whole compartment was full to the edge with water and only way that was discovered was when owner brought it to the shop saying it feels too heavy in the rear. Turned out to be a leak around a tail light.
