With the 7-bolt, I swapped mine out as soon as started passing about 20psi.

If you ever have to swap the headgasket for whatever reason, there is basically no reason not to go to ARPs at that time. So basically any time the head is off is a good time. If you are looking to do any sort of serious upgrades to your car, you should definitely change over eventually.
