Hello everyone
First of all, sorry if my English is bad, I'm writing to you from the south of France :)

I've got a European Eclipse, 2.0 N/A 4G63 (Not 420A).

I have a problem with the coolant.
It doesn't overheat.
I don't have any leaks.
But the overflow jar is emptying.
When I fill it and drive, it doesn't move, but when I stop the car and the pressure drops, it empties (Where, I don't know!).

New thermostat, all the hoses are new, the seals on the throttle body are new, and so is the radiator cap.

I tell myself that the only thing I must be doing wrong is bleeding.
My procedure:
1) I open the radiator cap
2) I start the engine and let the car idle until the fans start.
3) I top up with water
4) Close the radiator cap.

Is this correct?
How can I be sure that there's no more air in the circuit?

Sounds like how I do it.
Have you figured out where the coolant is going? If it's just replacing air eventually you would fill it up but if it's leaking then you would be low every time you checked.

I had a 3000GT that would overheat every time you drove it, the coolant would disappear and I would have to fill it again. What I discovered was the seat at the top of the thermostat housing where the cap would sit was erroded (damaged) and the coolant would be pushed into the overflow bottle and out onto the ground while driving. Replacing that fixed it.

Normally, expanding coolant goes into the overflow bottle when it heats up and the cap pressure valve releases it. When the car cools down the cap lets it back into the system and you don't loose any.

Have you checked your oil to make sure your not leaking coolant internal to the engine and made sure you not burning it by smelling the exhaust?
