I removed my Evap can and lines and plugged up the vapor line on the tank, now when ever I fill up, there is a major amount of pressure release when I loosen my gas cap. Now I know there should normally be a little bit of pressure (with evap stuff still there and working), but this seems like way too much.

I read about not having so much pressure in the tank, and that one guy had vapor lock and lean issues, so Instead of running a line down off the tank to the ground, could I run a line from the tank to the intake pipe with a check valve or something? I don't want an "open" fuel tank tank so to say.

Why don't you want an "open" tank? It's either that or run your charcoal canister. You could put some kind of valve on it that only bleeds off pressure when it reaches a certain point. I would just get another gas cap and drill a tiny hole in it.

The line coming from the fuel tank should have had a valve on it when you deleted your evap system. The one in line with the charcoal canister. Leave that valve in place and a piece of vacuum line on it and let it hang in the engine bay, problem solved!

I dont want an open tank, because moisture could form inside and cause problems and i dont want to smell gas everytime I get out of my car. Is there such a valve that can do that?

You mean the 90* one with the two balls inside? I was trying to think of a way to use that. I may just take one of the balls out and position it so that pressure can bleed off but nothing can get in.
