Yes you can. In the AEM EMS you would just select your outputs like this:

The IAT goes wired to the same input as the cable ties it too whether you have the cable or not so you don't have to set it up.

No, the cable comes with a MAP plug for a GM style sensor.

Do you already have the sensors? If not you can just go with a GM style sensor.

Then I would just change the connector if you really wanted to use the cable. If not wire them in, it's super easy. You can just use the stock wiring for the MDP. In that case you would just set the MAP sensor to this input instead. Don't see much of a point in spending the money to buy the harness if you still gotta modify it. Unless you absolutely don't want to touch the harness on the car.
