Ok so when I start my car cold in the morning the clutch pedal engages pretty close to the floor. It will be like this until I park the car and shut it off. When I come out of the store or whatever the clutch pedal has so much pressure it’s disengaging the clutch slightly without me even touching the pedal. The next day the cycle restarts. It has a brand new master cylinder and it’s been bled multiple times and checked. What would cause the pressure to rise in the few minutes my car is off?

You likely have the master cylinder rod extended too far to the point the bleeder valve is not allowing pressure to bleed back into the reservoir.

The only reason I wouldn’t think this is the issue is because if I shorten the rod at all my clutch doesn’t disengage when I first start it. Like mentioned it barely disengages when I first start it and disengages early after shutting it off after a drive and trying to drive it again

So you're saying you do have the MC rod extended almost all the way? Next time your clutch engages near the top, crawl underneath and see if you can push the clutch fork by hand toward the slave cylinder. If it won't move, you need to adjust the MC regardless of where it engages cold. It might be on the cusp and just needs a tiny adjustment.

Additionally, you may still have air in the system which is causing low engagement when cold. It's common to think you have it bled properly but there's still a bubble in the slave. I try to bottom out the slave by hand when I have the bleeder open to push out this pesky bubble.
