all the wires for the coolnat temp sensors

all the coolant sensor connector ends on my talon have been cut by the previous owner. ive managed to take one yellow wire with green stripe and connect it the the little sensor with 1 prong and get the dash gauge to read the temp. now i have all these other wires and 2 sensors.
my questions are this

are both the top and bottom temp sensors, excluding the one for the dash supposed to be 2 prong in a t config. because i have some spare sensors the guy gave me, 1 is a t setup and the other is a white plug end with 2 prongs (small) next to each other.
which sensors should be used in the top sensor hole and which should be used in the bottom sensor hole.?

also what wires do i run to each

and if you could please tell me why there is 2 collant temp sensors and why there is that 1 sensor for the dash and if im running the correct wire to it.
