I am using the earls fittings from the metric oil cooler ports to an -an adapter and noticed that the metric part of the fitting has a groove for an o-ring. Should I use an o-ring or use the stock metal/rubber crush washers?
 
If it has a groove for an o-ring, I would assume that you would want to use an o-ring. Try it and see how it works, it is fairly easy to change if it leaks.

Use the stock and you should be fine.
