Is there a preferred placement for the white wires to attach to the positive terminal? I've seen both methods, Photo 1 vs Photo 2

Second is better than the first but neither is really good. You don't really want to use the tightening bolt for a connection.

There are many. I think the stock terminals were something like these where everything attached to the single post. Depending on the condition of your wires and terminals you might find another type on terminal that would work better for you.
