Looking for some new wheels that have that have that waterfall look.

Assuming by 'warterfall' look you mean a concave wheel face. Most of the wheels offered with that type of face are low offset wider wheels. Generally a +30 and under in a 9-9.5" wide wheel.

I've been talking with a few wheel dealers trying to find something like that to fit my car and can really only come up with Advan RS/RZ, Volk TE-37, and a Work kai semi-concave that have the look and still fit reasonably well.

I know THE ARTIST is running an 18x9 +30 without problems as I talked with him about his set-up. I think anything beyond that is going to have drivability issues.

The underlines under the user names throw people off sometimes. If it appears the user has a space in their name, it's usually an underscore. To find out the exact spelling, put your mouse on their user name (next to a post they made) and let it there. It will get rid of the typical underline and show you their user name.

i also run 225/40's on my GS-T (which is streached on a 9" rim), minor rubbing in the rear but that could be cured with a little rolling or cutting.

the first time i orderd them the company told me that they wouldn't fit. but other than the inside lip on the rear they fit fine.
 
It all really depends on the offset. The stock photos people post trying to sell wheels is usually no help. Find a wheel design and start looking on google images with the size/offset in the search fields.
 
Those are just specs that I was able to find the concave wheel face in, but every wheel manufacturer is different. If you find something in a higher offset with that face, please post it up. Most of the really good concave looks come in the 9.5" wheel, but I've seen some decent ones in a 9" with the right offset.
 
im running 245/45/17's on enkie 17x8's lowered on sportlines. I'm not getting any rub so I would think the some 17x9's would work in a +30 offset....I'll do google search and see what comes up.
