What is this sensor?

I tried researching and googling and all sorts but I can’t find a thing about what this could be. I also tried following the wire as far as a I could, and it runs from the exhaust manifold over the top of the engine and into the steering shaft boot. It then runs around under my dash above my pedals and then runs what looks like up the side of the dash, I have pulled the a pillar but the wire isn’t there so I think it goes to something in the dash, but I don’t know. Any ideas? I wanted to get a different exhaust manifold but I didn’t want to pull the trigger until I figured out what this is and what it does.

Appears to be an unused EGT sensor, do you have such a gauge?

Yup, that's an EGT probe. Those were common back in the day as a tuning tool but has fallen out of favor and replaced with a wideband o2.

I figured it was EGT but I couldn’t confirm, and there is no gauge for it so it must have been removed. Is there any chance someone in the past unhooked one of the factory gauges and wired it to the egt? Idk why someone would do that, but ngl the wiring harness has been ran through and there’s random wires everywhere. And is there any way it could be wired to the ecu? I don’t see any readings or custom pin outs set on dsm link for egt.

Stock ECU doesn't use it. Must have been for an added aftermarket EGT gauge (usually added to the A pillar) which you no longer have.
