Question about creating some type of custom wiring harness.

Just finished tearing out the entire wiring harness out of the 1g drag car i'm building and had a question for you guys. Has anyone trimmed the factory harness down to just things that are absolutely essential to run the engine. I know the factory harness came with many plugs and such for emissions type equipment that I won't be running. So if anybody has any ideas or suggestions on what plugs are absolutely essential and which are not it'd be much appreciated, also if someone has done this in the past and has pictures that'd be helpful too...
