Problems after 2G brake install

How your brake booster? Try this: with the car off pump up the brakes. If the pedal dosent get hard then your booster is bad. They're seals on the inside on it that wear out.
 
The pedal gets firm after a few pumps and stays firm for a while until the car is started.

I wish I could drive another 2g GSX to see if my brakes are actually that bad. It does take effort to get the pedal to reach the end of its travel, but not nearly as much as every other vehicle I've driven. So the pedal doesn't just fall to the floor and the car stops fine under normal braking/traffic conditions, but during "oh sh*t" moments I just don't have enough braking power to he comfortable.

Maybe I'm expecting too much out of the stock GSX calipers.
 
Get the car up in the air on jack stands - wheels off lug nuts on. start the engine, 1st gear and gently apply the brakes. ABS will kick in and provided you are careful, you can bleed the brakes with the ABS engaging.

I don't see specific mention of this, but if you did not correct the bubble flare mismatch then you probably have an air bubble trapped in the fitting which you will never be able to get rid of - no amount of bleeding will resolve this. Sometimes the flare mismatch works, sometimes it doesn't, but when it doesn't work, you are flogging a dead horse.
