I have a 1997 eclipse spyder and it will start up perfectly fine. When I press into the throttle it will stutter and die. If I tap the throttle instead there are no issues. What should I try first to fix this.

I bought the car about a year ago not even knowing if it would run. I put a fresh battery and gas in it and it started… I just started working on this car and this is the one issue I have no idea about… it has a new fuel pump. I’m about to replace the fuel filter on it too… I’ll keep an eye out for any loose lines… I know the car was sitting for a couple years before I got it… I’m doing all the maintenance on it now

Oof, sounds like you got yourself a project. Take care of all the maintenance you can and see if that helps. Fuel, spark, air. Sort of sounds like a TPS or MAF problem, but I'm not all that familiar with the 420a so hopefully someone else here can chime in. Maybe also see if you can get a scan tool to look for any stored codes.

Spyder GS is 4G64

OP there are so many things that can be at fault here. You need to do all your basic maintenance first since the car sat so long. Plugs, wires, fuel filter, etc. Then you can start proper diagnostics.

So I believe I’ve done most of the basic maintenance… oil, fuel filter, air filter, plugs and wires… it’s still stuttering when I apply throttle… it idles perfectly… I’m not sure where to start next

Did you get all the old gas out of it? New fuel pump? What kind/size? Need to make sure it's not some giant fuel pump. do you have any codes? Do you have a way to datalog? If the answer is no I would suggest a cheap OBD2 bluetooth dongle and the torque pro cell phone app. You need data. Fuel trims, throttle position, o2 feedback, coolant temp, etc. Lots will be revealed if you can see what the ecu sees.
