stock temp gauge is reading 75% on my friends 95gst
the car only has an intake.

Not quite enough information...searching is good on this as it is a common topic. But anyways...

Fluid level good? Leaking anywhere? Check radiator hoses.

Does it only happen when driving or is it idle?

idle is fine, fluid levels good. the owners not a noob, wondering if any interals can cause this.. engine cools down to 50% pretty well just goes to 75% when gased

First suspicion on a normally-running car with a gauge reading abnormal is the gauge and its sender. Next guess for mystery overheating in a DSM is a failed or failing plastic waterpump impeller. This would turn much worse in very few miles.
