driveshaft shimming, asked in a few threads but never answerd

the previous owner of my car changed the carrier bearings on the driveshaft, but he never put the shims back. ever since i have owned the car it has made that annoying driveshaft humm when you let off the gas in gear. all the manuals just say count the shims and put it back together with the same amount. Should it be level with the rear, or set at a certain degree. someone please help

Put the car on level ground. Get a level, put level on driveshaft. Make driveshaft level.

It's the only truely reasonable way I've ever heard it done.
