Changing the head gaskets, should I do valves and springs?

Check the condition of the valve stems seals, make sure no leaks. You can get to your goal on stock setup and maybe some bc272's to help. But if you have everything out and the funds to upgrade than its a good time to start. Oh and you should pick up some arp headstuds if you haven't already!
 
As said above, some BC1100 and stock retainers will be a good addition. Make sure spring installed height is checked.

This set up is good for the smaller 272 cams, HKS, FP/Comp, BC

I have found most stock springs to be weak from age and abuse.
