Why don't you have your o2 attached to your exhaust and plugged back in? That would be the natural and wise thing to do

With a cat delete it more than likely will throw a cel. it will run even worse without it plugged in. if you plug it in it will still probably throw a code but the ecu will be able to use this code and instead of saying the cat is bad (and when it does that it usually lowers your fuel trim and throws the car more into limp mode. with it plugged in the ecu will think it's just a bad o2 sensor and will continue running as it should but you will get lower gas milage.

ways around this... there are few but they can work. Best bet (cheapest) assuming you dont have to drill and tap a spot for the o2 sensor to go in, use that location. A sparkplug nonfouler can work to bring your o2 sensor away from all of the exhaust smoke, but don't get a long one, as it will backfire and say the o2 sensore is bad (reading low voltage). too short and it's in the direct path or the exhaust and it tells your ecu you're running rich which brings you back to fuel cut like i mentioned.
There is a product i saw, i believe at SBR that is like a converter box you just wire up to the o2 sensor and it will give the ecu whatever number it is looking for. Other people have made these transistor boxes at home themselves. But you have to make sure you get the correct ohms. So avoid all that and just get the one they sell, even if it does cost like 60 bucks or whatever the price was.
the third and final thing you could do, replace your ecu with a MS or aem unit or which ever brand and take that out of your computer for good. Given this is more promising, those units are around 600 and up.

No it will not throw a code. Your car is a 1g with obd1 and it doesn't care about what the cat is doing. You have one o2 sensor and that is before the cat.(02 housing) It doesn't care about anything after that sensor. On a second gen there is another sensor after the cat to make sure the converter is doing its job, but on a first gen it doesn't. You will be fine
