I am about to do a timing belt/water pump job on my 97 talon TSI.

I already have the water pump, timing belt, balance shaft belt, auto tensioner, and timing tensioner pully. Also have a good valve cover, and valve cover gasket set on the way.

What else should i replace at the same time?

Any upgrades worthwhile in this process?

Only want to do this once!

Get the tools to do it right the first time! You pretty much have to have at least a adapter for the timing belt tensioner pulley.

You could also clean out the lifters wile you have it apart, you would be surprised at all the carp that gets in them!

Checking out crank pullies on ebay,,, Can I use a stock timing belt with underdrive pully? Do I need to keep the harmonic balancer? I figured to just go ahead and buy the timing tool mentioned above, and a new crank pully. that way there is no problem if the stock piece is damaged. Gonna get the seals too!

Keeping the harmonic balancer is debatable but me, personally, I'd recommend keeping it. If you plan on going aftermarket, I'd go with Fluidampr. If not, stick with OEM. However, DO NOT buy a Dorman balancer. If you didn't already buy the timing tool that was mentioned already in this post, I would also recommend the Jay Racing timing belt tool kit. It includes the above mentioned tool along with a tool that locks the cam gears in place and the auto tensioner tool. I'd also deter away from underdrive pulleys.
