I have a '97 GST. There is a large canister underneath my battery and the side of that canister that is facing the firewall has a vacuum hose coming out of it with a sensor or something in it. I was wondering if anyone has a diagram of this component and what it is?

It's the smaller piece on the right.

Look up Taboo vacuum diagram in a search here on the forums will give you a complete diagram of everything for ya. Its part of your emission equipement.
 
That's your EvAP canister. It stores gas tank fumes so thay can be burned by the engine. If you don't have emissions testing in your area, I would remove it, cap the vacuum port for it, and vent the gas tank out from under the car with fuel safe hose.
