It's a feature that allows you to switch over to speed density. You're not going to be doing that so ignore it.
 
The VE table is for adjusting the fuel curve at various rpm's. VE stands for volumetric efficiency and this is a number of actual cylinder filling. Cylinder full of air when intake valve closes VE=100%. On a boosted engine VE will go over 100%. Most of the time not under boost VE will be lower than 100%. It's just a way to compensate for various operating ranges your engine sees.
 
What you are looking at is DSMlinks way of getting around MAF overrun. On Karman Vortex meters like we have from the factory, at a certain amount of airflow, the meter actually begins to become overrun, and the airflow metering becomes inconsistant. DSMlink has a user defined switch over point, where it will switch over from using the stock MAS to meter the air, to a new form of almost speed density type metering.

The VE tables are used to as someone mentioned set up the volumetric efficiency of your particular motor, and is only used during this speed density switch over. The use of the MAP etc, is simply an attempt to make this calculation that much more precise when it switches over, as it is doing its own calculations to create some sort of airflow value.

If you arent overrunning the stock MAF then it isnt an issue. I'm not sure what 1g's generally are overrun at, but I remember Dave and Tom saying that generally 2g MAF's don't overrun until roughly the 2700-3200hz range, somewhere over 50lb/min. This is the stock, unhacked MAS. Hope that helped.
