Alright I'm repairing my strut towers, at least reinforcing them, and I was wondering how I should go about putting the sheet metal on it. As in one big sheet and bend it over the top of it, or have a few little sheets attached onto eachother.

Here's a pic of what I'm at right now. I just want more practice hand's advice.

Cut all the rusty holy metal away entirely, and rebuild it to it's original configuration. That means patch all that inner stuff first, then patch the outer part. Don't skimp by just welding a patch over the top.

Use a drill or spot weld cutter to remove narrow scraps of garbage, or to separate parts, and weld inside the drilled holes to recreate original spot welds to the new panels.
 
As others have stated, you need solid metal to weld to. You can use a bench vise to form long straight angles; the less-sharp angles can be formed as you go using a body hammer.

As you weld, the metal will be warm enough to bend into shape fairly easily.
