I am liking to resurface the interior console and trim.

I am looking for some advise and maybe some helpful tutorials on how. And if any suggestions

In some cases something as simple as 'Armor All' works well.
If you are looking for a more permanent solution 'Plasti dip' can be used.
If you want something that will last for a long time you would need to paint it.
Some other options would be vinyl wrap or even to glue new material (fabric, leather) onto existing material. What you need to do depends on what is your goal as far as finish goes.

I want I nice smooth gloss so thinking paint is my best solution

Paint will definitely give you a shiny finish, although am not sure of how it will work on that leather texture, some of the texture may show through. Try it on a small panel first, maybe even get one from a junk yard.
One thing i forgot to mention though is that regular paint will crack if applied to a flexible surface like the arm rest on center console. That being said there is special vinyl paint that is made to be semi-flexible and it will not crack, at least not as easy.
It would be beneficial if you could go talk to someone in a paint mixing store, usually they would know more about things like that and might even suggest an additive to make your paint more flexible.
In 'extreme' cases people even apply fiberglass over existing material and paint it like they would a car body. That will definitely give you the smoothest shiniest finish possible since it will fill any textures.

I thinkI am going to with grabbing extra dash from junk yard, fiber glass it and do a good paint job on it. Prolly do a airbag delete and custom fit something like more storage or tablet.

Another vote for using SEM paint for the interior. But remember whatever paint you use, prep is the most important.

Hydro graphics is another option. Gives a smooth, paint-like finish...and comes in a very wide array of designs and colors.
