Um it's all cons...You're engine will never get up to temperature which will give you bad gas mileage which will also expedite wear to your engine since the metals that are supposed to expand when heated, won't expand.
 
Now why in the world would you even think about running your car without something designed to protect your motor? This is a silly thread. Theres nothing positive about not running one.
 
No thermostat is a bad idea. Without it in there there is not enough restriction in the system. The coolant flows too quickly and does not stay in the radiator long enough to dump the heat. You should reinstall the thermostat, or if your really against it, dismantle the thermostat(remove the spring and valve) and just install the plate to provide some restriction in the system. Sounds like there is another issue here as well, just thought I would point out no thermostat will not help.

EXTREMELY BAD idea!! If you wanna run cool, do it right, get cooling mods like lower temp thermostat, better rad, oil coolers, ect
 
on some cars it will actually cause the car to overheat. The coolant wont pool in the radiator long enough for it to be cooled before it re-enters the engine.
 
i had a neighbor argue with me that you dont need to run a T stat in cali. and this was while he was asking me if i would do the HG's on his 00' stang that the hg blew and it had no T stat LOL
 
this is like an "old wives tale" of the automotive world. As stated above, NOT a good idea. Engines are designed to operate at a certain temperatue of optimal efficieny. Use the other suggestions above if you are experiencing some cooling issues.
