No thermostat is a bad idea. Without it in there there is not enough restriction in the system. The coolant flows too quickly and does not stay in the radiator long enough to dump the heat. You should reinstall the thermostat, or if your really against it, dismantle the thermostat(remove the spring and valve) and just install the plate to provide some restriction in the system. Sounds like there is another issue here as well, just thought I would point out no thermostat will not help.
