Well i'm swapping in a complete 6-bolt engine on my 95 GST, the engine is used, i plan to change the water pump, timing belt, tensioner, oil seals, remove balance shafts, head gaskets. IS that good enough to ensure the motor will work fine??

What should i look into when buying a used 6-bolt??

Since the engine will be out of the car, no other time would be better to do some preventitive maintenence. I would try to get a compression test done on the donor car if the engine is in and/or capable of it. Besides the components you mentioned I would also install a new oil pump.
 
I've got COP in my stang. No one ever thinks that is pimp. Anyways, what about replacing your valve springs and retainers?
