I've read about it being possible for cars but lost the article I read, though I just found this article where someone had done it using an iPhone on a Harley:

Just wondering how far off it might be before we can do it on a car. Anyone found anything? It might end up being a less expensive, and cool option to mount as a dash - with speedo, tach, temp, pressure, and all other data that would require a ton of gauges or a super expensive dash display system. Plus, this one could be made to be portable - mount it in the car and take it out when you're done. Imagine it!

It could possibly be used for an android tablet, for people that don't like apple.

I work for Scantool.net the simulator software works very well and could probably be developed for a tablet by us if it was in demand.
