Is there a general rule of thumb for installing gaskets? RTV everything? Copper Spray? Etc? I’ve seen some talk about specific applications (head gasket, water pump) but never just a general practice.
I was taught to use gaskets dry on clean surfaces unless the manual states otherwise.
What do you all do?

On paper gaskets I've used copper spray on almost any gasket including the head gasket. I personally like the copper spray as it helps hold it in place while installing plus gives it that extra hold! On rubber seals I like to install them as is except the valve cover, I put a thin layer of RTV on the top (VC side) in the corners. I clean all surfaced with a razor or steel wool with glass cleaner followed but a wipe down with brake cleaner.
 
Never spray anything on any head gasket unless its a copper gasket, thats the only head gasket that copper spray is for and it was made for copper head gaskets on old motorcycles and lawn mowers and such, using any type of adhesive on a head gasket is asking for failure, the head gasket needs to be able to move with the engines expansion and contractions, you can use it on paper gaskets if you like. As far as liquid gasket material, dont use any of them that smell like vinegar, or any that are listed as silicone based, they will trash any oxygen sensor that you have including wideband sensors in short order.
