I installed the Energy Suspension motor mounts on all four mounting points. Is it normal to experience a lot of vibration at idle which is around 750RPM. My entire dashboard shakes but as soon as I come off Idle it smooths out all the way to 7500rpm. Is it normal to experience a lot of shake at idle?

Yup. There is a reason the stock ones are rubber. It's a compromise. You've now changed the durometer.
 
Given enough time, you might find yourself switching back to rubber. I've run poly mounts since 2009 and I've had enough of the shake.. going back to OEM-style this spring.

I have a set of factory style replacements but for the life of me I can’t get the saddle on the inner fender to open wide enough to fit it on the driver side.
 
I've had poly mounts on several DSMs and never really noticed much more vibration. Could be because those all had the BSE done as well, not sure. But even with the extra vibration, your dash shouldn't be shaking, especially at just idle. If it's very little, then maybe, but a lot, I'd say there's something else potentially.
 
Do you still have balance shafts? You could consider raising the idle if it gets better at slightly higher RPM. IIRC you need ECMLink to adjust your target idle.
I personally use OEM mounts for this very reason.
 
I do have the balance shaft. I have aftermarket factory mounts but the female mounting cradle on the driver side is too narrow for it to slip into. I don’t have access

In my 1g I couldn't read license plates at a 900rpm idle in the rearview mirror. The steerwheel vibrated like a massager.
Did that for its full life (roughly 30k km) before I sold the car and tore down for inspection. Bearings were still good to roll, a little shiny but I attribute that to aggressive tuning.. first engine I ever built and tuned myself.
My 2g isn't nearly as bad, but it has front and rear inserts so might as well call them rubbers still.
