Recently, I had this issue:
Seeing EGT a little more than I am used to. For example cruising 820*C; top of 3 gear-8300rpm - 845-850*C; top of 4 gear - 875-880*C. This is the normal temps I am seeing.

Then 2 days ago I noticed like25-30*C more than I posted above. Cruising like 850*C, and I did 3 gear pull, it was 875-880*.This temp I used to see in fourth gear/in all cases I mean WOT, unless cruising/. Then on my way back home everything was normal, but it was very late at night and few degrees cooler, than before.

All my mods are in my profile. I use Mobil only 93 octane. Car has AEM. AFR's are low to mid 11's, timing is conservative - 13*up top. Nothing has been changed, since my last tune. I run 22 psi. Cruising AFR's are in mid 14's.

So it does not make sense to me ,but does colder or hotter ambient temps, affect in some way EGT, or should they ???

If not what you think in this case, may be a little more timing/ign./ when boost comes???
Otherwise car runs like champ and has no single problem at all.

Is the air temp/fuel correction table setup correctly? There's an excel spreadsheet floating around the AEM forums, it's really helpful.
