Different A/F at different gears?

When I do a pull in 3rd gear the A/F on my wideband will say around high 11s and when I do a pull in 5th gear the A/F will say 10.0 and maybe even lower but I can't tell though. I know these gears have different loads on the engine but i dont know what to follow in terms of how I should tune. Do I go by the 5th gear pull or 3rd gear pull? Plus my Pocketlogger always says has a knock count of 43 when I do a WOT pull (phantom knock) so I cant tune based on the knock count and I need to rely on the A/F wideband gauge.

You should be using 4Th, unless someone can correct me on that. you need to use the 1:1 gearing from the transmission and i believe that's 4th.
 
With all the mods i have in the car i dont think phantom knock will go away.
