I was doing some pulls and I noticed my car was running hot I immediately stopped and checked under hood and my coolant reservoir cap popped off and sprayed good amount of coolant in the engine bay. Does anyone know could cause this to happen? I put it back on but I noticed it was pretty easy to pop the lid off by hand

It popped off because you overheated. Now yiu need to find the root cause of overheating. Fill it with coolant. If the cap is suspect get a new one
