car trouble

my 98 tsi talon has been temp takin off the road . got a slight smell of gas in the oil no smoke anywhere tho runs great aside from trying to give it more gas no matter how fast you go got upto 60 as long as i give the gas slow its once you try to even punch it a little the car starts to for lack of better words stutter/shake i replaced the fule pressure reg not sure what to try next any ideas?

Probably a boost leak, its probably going lean and dumping fuel, hence fuel in oil, should probably change the oil once you sort it out. I would check for boost leaks, spark at each cylinder, and that none of the injectors are hanging open(This can be checked by pulling the fuel rail while leaving the fuel lines connected to it and priming the fuel pump with the jumper on the firewall for a second or 2, there shouldn't be any fuel coming out of the injectors, additionally there should be pressure behind the regulator if you took it off, if not the pump could be weak, which could be checked by pulling the return line and priming it, fuel should come out at a decent rate.) Obviously when checking the fuel stuff try not to make a mess or get sprayed in the face, etc. But my number 1 suspect would be a boost leak, check all the couplers are tight, make sure the injector O-rings are in place on the cylinder head. And if it has an adjustable CAS you should also check timing.
