I have a 2100 street disk and pp laying around and I'm doing a 5 speed swap on my 2g fwd. I have a 16g at 20 psi with supporting mods....would a 2100 stand up to this? I would like the extra growing room of a 2600 but I'm a little leary about using a 2600 with my 7 bolt. would the 2100 hold up to a 16g?

A 2100 is the rating on the pressure plate just as the 2600. The clutch disk is what is going to take the beating. You should choose the pressure plate based on pedal feel rather than horsepower if your power goals for the car are under ~375whp. An ACT2600 pressure plate and street disk will hold 400lb/ft of torque. I'm not sure what the street disk will hold with the 2100. A 4puck and 6puck will have a completely different feel and hold more hp/trq than a street disk equipped with the same pressure plate. Hope this helps clear things up a bit.

You can't really say X clutch will stand up to everything Y turbo can putout. What are your power goals for the car? FWD? AWD? How do you drive it? All these should play into your decision. With a 300hp FWD I'd recommend the 2100, for the same hp level and AWD I'd recommend the 2600.

First of all, drivetrain does not see the power, but rather just the torque ;). But what is even more important is what kind of use you are looking to get out of your clutch. Many people do not realize that FWD cars can be tougher on the clutch than the AWD cars! That is because you need to slip the clutch more on the FWD car and ACT 2100 does not like to be slipped!

So it is fine for an AWD car with the 16G type of power, but you might find it slipping and glazing if you have 16G FWD car which you often take to the track.

If this is going to be mainly daily driver with just an occasional spirited driving, ACT 2100 will do just fine on ether platform.

Stemming from what Leon added, regardless of which pressure plate you go with if you intend to race a considerable amount with your FWD then I'd advise against a street disk. It's great for a daily driver and even for the occasional trip to the strip but with repeated launches, slips, and abuse and you'll be breaking back into the case before you'd like to.
