So I have a aftermarket Oil Pressure gauge, Which location is a better place to install the sender? On the head or on the oil filter housing?
 
This is usually a matter of opinion. Oil pressure SHOULD be roughly the same at both locations. However, I HIGHLY recommend getting the kit that STM sells which is basically a braided house and adapter so you don't have to bolt the sending unit directly onto the head or OFH. The vibration will quickly ruin the oil pressure sending unit and you'll have to replace it.
