I recently swapped 94 Eagle Talon calipers brackets and rotors to my 91 and today on first drive both front wheels started smoking. Upon inspection, I see a groove in the rotor and only 1 of 2 pistons on each caliper are currently working.

What causes this? All parts were purchased from RTM Racing. Brand new.

The calipers don't look very new and I don't see any grease on the pad backing plates where they slide in the carrier anti-rattle springs. The grooves are caused by something hard trapped in the pad. Is that pad hitting the carrier on the bottom in you second picture? It should have clearance like in my picture.

How did you decide only one piston is working? If that's the case you may need to get a rebuild kit and try again.
