420a Engine Guage going Past Hot, Help Needed

Hey. Okay let me tell you a bit about what I did to my engine and see if someone has a solution. I have a 1999 420a engine, the only thing I have changed recently is the fuel pump to walboro 255, and I changed the water neck to a chrome one. My engine guage that reads from cold to hot is going past hot after my car has been started for about 5 minutes. Could it be that the anti freeze is not flowing through the middle nipple looking piece that goes in the middle of the waterneck, like its not opening up when needed to be open, or could the sensors that i had to thread back into the water neck towards the bottom not be in tight enough where it is reading correctly? I had a hard time getting them to thread in fully so Im not sure if that is what is causing it to run hot. I thought maybe the sensor wasn't reading correctly and the car wasn't over heating until today, my friend drove it about 6 miles and the A/C wasn't cooling off the car. I changed all the hoses when I replaced the waterneck and put new gaskets in. I have 45k original miles on my car and keep the engine really up, so if anyone has an answer please let me know what you suggest! Thanks.

Does it over heat when idling, at highway speeds, or both?

The thermostat is the part that is in between the two halves of the "waterneck" (thermostat housing). If it were stuck closed, or somehow clogged or otherwise restricted, the vehicle will overheat.

The sensors don't need to be threaded in fully, only enough so that coolant does not leak past the threads.

Are you noticing any leaks around where you were working? How about coolant dripping from the timing belt cover?
 
Yeah it could be a few things, the thermostat, bad radiator, or could be the fans. When you turn on your car make sure the fans are blowing at a decent speed and aren't barely blowing. Even though you just replaced all the hoses, trace the radiator hoses and see if any of them are leaking.
 
Thanks for the reply. Well, the fan blow's normally, there are no leaks. It will go past Hot on the Guage while idling, when it get's to 3/4 hot it shoots up past hot within a split second.
If the thermostat is closed, could it be possible that I put it back in wrong? I think that it is restricted and not opening. But there are no leaks anywhere. I am using a vortech 12:1 fuel management. Also, I barely drive my car, Im usually working on it upgrading here and there, so just recently I've started driving my car, and not even taken it out for more than 15 miles in the past 3 months. Just testing it after I install parts to make sure it is functioning and then I start upgrading more.
