2G GS 19x8 Offset Question?

The new wheels come in either 35 or 45mm. Offset is the only handleing issue I can't get figured out. On these 19" wheels, I'm going to run 35 series tires. Which wheel will stick out more, and how low will I be able to go without rubing the tire up against anything?

I have 45 offset on mine and no rubbing whatsoever. I'm also lowered 2.5"
