As Synthetek said, mostly they let you turn things on and off to test them. The most useful, and probably the only two we really make use of are the BISS set, so you can properly adjust your base idle, and if you're like me and have done the 6-bolt swap, the 1G 5deg BTDC so you can properly set your timing.

I've also used the fan tests to test my fans after the Evo 8 ECU swap, as they use PWM fan control and we do not. For the most part you'll rarely use them, but they're handy when you need them.
