Hey does anyone know the maximum boost level your car can handle? Looking for stock levels and how much boost will it take to shut off
 
The stock boost levels ( as read by the guage in my car when i got it) were 12 under normal conditions, and if it detected knock it would pull the boost back down to ~ 9 PSI as well as pulling timing out.

For the stock T-25, you'll have trouble getting it to hold 15 PSI all the way to redline. I had mine set at 17 PSI, it would spike hgher at first, and then after 5500 RPM it would steadily fall and only be able to hold 11-12psi by redline

If by "shut off" you mean to hitting fuel cut, that all depends on the turbo. Fuel cut isn't so much "boost dependant" as it is based on airflow or volume of air. Some turbos will flow enough air to hit fuel cut on a stock ECU at as low as 10 PSI or so, while the 16G i had would cause teh ECU to hit fuel cut at about 17 PSI. This was before i upgraded the injectors and put a SAFC on it to dial the ECU in correctly.

I never was able to hit fuel cut on the stock T-25, but then again i never tried pushing it past it's basic limits, since at higher pressures all it does is create more heat and very little improvement in the amount of air it flows.
