245 is going to be to big for a 7.5in rim. I know if will work with an 8in. rim but with 7.5in it is to much I beleive.
 
Although probably not the best for handling, at least some 245/45/17's are spec'ed for 7.5 wheels. And yes, the offset is okay.
 
Wouldn't a 40 series tire be better than a 45 the roll out would be closer to the same and in all actuality a smaller diameter tire will be better than a huge tire for rotating mas but i would say the stock roll out would be great. just my .02.
